Raspberry Almond White Chocolate Cupcakes
 with Cream Cheese Frosting

OK. Here it is...these are my favorite cupcakes. Ever. They are so easy you will cry. Your family will love you and think you're amazing. And you will smile...and let them. Usually these are topped with a Raspberry Whipped Cream Frosting (look for a Valentine's Day post!)  but I made these for a very large party (355 cupcakes!) and I needed a hearty frosting because they needed to be made ahead of time. 

Raspberry Almond White Chocolate Cupcakes

1 box your favorite white cake mix
mix as usual plus...
1 extra egg (I always add an extra egg to my cake mixes)
1tsp vanilla
1tsp almond extract

Bake as usual following box instructions. Cool completely.

Cream Cheese Frosting

2 (8oz) pkgs cream cheese
1/2 c butter, softened
2 c. sifted powdered sugar
1 tsp vanilla

Cream together cream cheese and butter until creamy. Mix in vanilla, then gradually add powdered sugar.

Pipe onto cupcakes or frost by hand whatever makes you happy! Top with white chocolate shavings, a raspberry and a dusting of powdered sugar. 
Done. Await the applause.
